La catégorie Premium est notre sélection cérémoniale raffinée : il s’agit de feuilles de première récolte ( ichibancha ), cultivées à l’ombre pendant une longue période avant la cueillette, et dont seules les plus jeunes feuilles sont sélectionnées. Ce matcha offre une saveur umami très intense, une amertume très faible et une astringence minimale. Sa texture est idéale pour le koicha, la préparation épaisse, ainsi que pour l’usucha.
Le Matcha Kyoto Masudaen est classé en catégorie Premium grâce à sa texture en bouche. Il associe Yabukita , Sayamakaori et Okumidori , et une onctuosité délicate laisse place à des notes herbacées et de légumes cuits à la vapeur avant qu'une légère astringence florale ne rafraîchisse le palais.

Ce matcha est soigneusement élaboré à partir d'un mélange de trois cultivars de thé distincts : Yabukita , Sayamakaori et Okumidori .
Yabukita , réputé pour ses délicieuses notes végétales et sa saveur umami prononcée, est devenu la variété de théier la plus populaire au Japon.
Sayamakaori , un cultivar relativement récent, est prisé pour sa forte teneur en catéchines et est couramment utilisé dans les thés noirs, mais il donne également un thé vert corsé et savoureux.
Okumidori , ajouté au mélange pour sa capacité à apporter une finale onctueuse et un goût riche et corsé, ajoute de la profondeur au profil aromatique du matcha .
Préparation et service30 g = 15 portions · 60 g = 30 portions
Fouettez-le finement comme un usucha, 2 g de matcha permettent de préparer un bol.
Trempez le fouet en bambou — 2 à 3 minutes avant la première utilisation, 30 à 60 secondes pour une utilisation quotidienne.
Tamisez 2 g (1 cuillère à café) de matcha , soit environ 2 cuillères chashaku , dans votre bol.
Chauffer l'eau à 70°C / 160°F.
Ajoutez 10 ml (1 cuillère à soupe) d'eau et travaillez jusqu'à obtenir une pâte lisse sans grumeaux.
Ajoutez le reste de l'eau — 80 ml / ⅓ de tasse au total.
Fouettez en effectuant des mouvements rapides W pendant 15 à 30 secondes.
Savourez votre matcha , puis rincez le fouet, laissez-le sécher à l'air libre et rangez-le sur son support.
Artisan du thé : Masuda-sanShizuoka
Le Matcha Kyoto est cultivé par Mr. Masuda , un producteur de thé expérimenté de Shizuoka qui gère une vaste plantation. Lors de notre visite de sa ferme, Mr. Masuda nous a présenté en détail le processus de production du thé, de la culture à l'emballage.
De plus, nous avons découvert les différentes qualités de thé matcha qu'il produit sur sa plantation. La première récolte donne matcha de qualité cérémoniale si onctueux qu'il se déguste nature, tandis que les récoltes suivantes servent à fabriquer matcha idéal pour les lattes.

Comme son nom l'indique, le Matcha Kyoto est cultivé à Kyoto , au Japon. Kyoto possède une longue tradition dans la production de thé matcha premium . Les premiers plants de thé cultivés au Japon l'ont été sur le terrain d'un temple au nord de Kyoto en 1192. Depuis lors, la région de Kyoto et Uji est un haut lieu de la production de thé, et plus particulièrement matcha .

Discover the art of preparing the perfect bowl of matcha, from choosing the right tools to mastering the traditional whisking technique.
Prepare
Soak the bamboo whisk. First use: 2–3 minutes · Daily use: 30–60 seconds. Sift 2 g (1 tsp) of matcha, or 2 chashaku scoops, into the bowl.
Make the Paste
Heat water to 70°C / 160°F. Add 10 ml (1 tbsp) of water and combine into a smooth matcha paste with no clumps.
Whisk
Add the rest of the water, 80 ml / ⅓ cup in total. Whisk in quick W motions for 15–30 seconds.
Enjoy & Care

I make a matcha latte everyday now that I’ve found Nio Teas.
I no connoisseur of tea but have been drinking green tea for 40+ yr. I always drank it hot and plain but now I’ve discovered matcha latte I am hooked. I drink it iced for summer. So refreshing. I put in Califia organic almond milk with a splash of nutpods vanilla creamer. OMG good! I hardly drink coffee now….weird.
I tried it as a latte which tasted bold, earthy, and ever so slightly bitter which I didn’t mind. If anything, I think the bitterness added to its bold flavor profile. It also left a lingering sweetness that tasted like sweet peas.

Sehr schöne Farbe und nicht bitter/grasig. Mir fällt es zwar etwas schwer die richtige Menge zu finden, wenn ich einen anderen Matcha ausprobiere, aber ich denke wenn man da etwas für sich findet schmeckt dieser Matcha wirklich gut. Vorallem der Preis ist für die Qualität echt super. Persönlich bevorzuge ich Matcha in Dosen, kann aber völlig nachvollziehen wieso das nicht jeder so verpackt. Der Versand war sehr schnell, obwohl es eigentlich nur ein Pre-Order war - es kam sogar schon vor dem genannten Datum an :) Vergleichen kann ich diesen Matcha mit den beliebten Marken nicht wirklich, da ich bis jetzt noch nicht viele verschiedene ausprobiert habe.( Ich gehe mit Matcha eher sparsam um und kaufe nicht direkt wieder nach.)
Heute Morgen den Kyoto Masudaen geöffnet und eine Schale Matcha zubereitet. Gemäss Geschmacksprofil wird er als süsslich bezeichnet. In meinem Fall war er aber unangenehm bitter. Auch war die Farbe des Tees nicht so leuchtend grün wie ich es erwartet hätte sondern einen Stich bräunlich. Vielleicht gab es hier eine Alterung im Teepulver, trotz geschlossener Vakuumverpackung?
Ich werde morgen nochmals testen und sonst wird er halt mit Milch gestreckt...

This Matcha is great! Ive tried other matcha from this cultivator before and they are all fantastic! Its creamy and smooth, but still rich in flavor without having that bitter taste that lower quality matcha can have sometimes! So glad I was able to get a good deal as well!
The taste profile chart is the most accurate and unbiased rating chart from a matcha brand. I was pleasantly surprised and would repurchase. Also the packaging has a cute design and is resealable. I would've preferred a tin, However, I'd rather pay a cheaper price for the bag than a higher price for the tin.
